Chemical propertiesColorless viscous liquid, slightly pungent in taste, slightly sweet in taste, and highly hygroscopic. It is stable at room temperature, but it is prone to form propionaldehyde, lactic acid, pyruvic acid and acetic acid at high temperatures. It is miscible with water, ethanol, acetone, ethyl acetate and chloroform, and soluble in ether and benzene. It is soluble in many essential oils, but not miscible with petroleum ether, paraffin and oils. pH 6-8(100g/L,H2O,20℃). Melting point -59℃. Boiling point: 188℃/760mmHg. Density ρ(20)1.035-1.040g/mL.
